Easy Palisade Peach Cobbler: A Taste of Summer in Every Bite

Over the years I've tried many a cobbler recipe. My childhood favorite was a cast-iron blackberry version, made from the buckets of berries my brother and I picked along the fencerows and ditches near our family property in Alabama. While I appreciate that cobblers showcase fruit and berries, most recipes call for so much sugar that the fruit's flavor gets obscured.
This Palisade peach cobbler recipe uses less sugar, and it's definitely better for it. During peach season I use fresh fruit, and during the winter months, the peaches I've frozen from the August harvest work just as well. Prefer berries? Add an extra cup of berries and 1/4 cup more sugar in the fruit mix.
Palisade Peach Cobbler
Serves 8-10
Ingredients
1/2 cup unsalted butter, cut into smaller pieces
1 cup all-purpose flour
3/4 cup brown sugar
3/4 cup granulated sugar
1 tablespoon baking powder
Pinch of salt
1 cup milk
4 cups fresh (or frozen) peach slices
1 tablespoon lemon juice
1 teaspoon pure vanilla extract
Ground cinnamon, for dusting
Directions
Preheat the oven to 375 degrees Fahrenheit. While preheating, toss the butter pieces in the 9x13-inch baking dish and place in the oven to melt butter.
In a medium bowl, combine flour, 3/4 cup brown sugar, baking powder, and salt. Then, add milk and stir just until dry ingredients come together into lumpy batter. Remove the dish with melted butter from oven, swishing the butter gently in dish until it's evenly distributed over the dish interior. Pour/dollop thick batter over buttered surface. There's no need to stir here.
In a medium sauce pan, Bring 3/4 cup granulated sugar, peach slices, and lemon juice to a boil over high heat, stirring constantly. Remove from heat and stir in vanilla extract. Pour over batter without stirring into batter. Dust with cinnamon.
Bake for 45 minutes or until golden brown. Serve cobbler warm with a scoop of vanilla ice cream if you have it on hand.
